VIDEO: Pig smoked on side of highway — Texas style

Jon Kettles is bringing the big flavours of Texas to small-town Desbarats.  

He is the owner of the recently opened Texas Barbecue of Canada, located at 7931 Highway 17E.

Kettles has deep roots in the area. His great-grandfather, originally from Scotland, settled in the region in the late 1800s to start a farm. As a kid, Kettles spent his summers there.

After living in Texas — and mastering the local barbecue culture — he has returned to his roots to share what he has learned.

A purist when it comes to seasonings, Kettles only uses salt and pepper on his cuts. He says it's the process of smoking that brings out the best flavours.
