Diabetics: Green Light for Healthy Chocolate

Stephanie MartynuckAlmost everyone has a friend or a loved one that has a blood sugar problem. Diabetes is a condition where the blood sugar levels are abnormally high (also referred to as hyperglycemia). In my conversations with family members and friends that have this condition they have searched for healthy alternatives to chocolate because it is a well
known fact that chocolate would cause their insulin to spike.

Some have gone the route of carob, which is a great alternative to chocolate, however, the additional ingredients added to the carob can cause the blood sugar levels to have a similar effect.

I have finally found a product that my friends and relatives with blood sugar problems can consume that looks like chocolate, tastes like chocolate, but actually has positive effects on insulin levels. How can
this be? Raw cocoa (or cacao) has natural occurring chemicals called "epichatechins" and "procyandins" which help the insulin work better. Flavonoids or bioflavonoids (the old name was "tannins") are compounds that give vegetables, fruits, grains, leaves, flowers and bark their
color. The colors include the deep red, purple, mauve, blue and red (colors contained in raw cacao beans). These compounds also protect the plants from disease, UV light and from predators. The flavinoids and bioflavinoids increase insulin sensitivity and forces the blood sugars
faster in the cells. It makes the sugars burn faster and helps stabilize the overall blood sugars. This chocolate is also sweetened using raw cane juice, which is a pure form of sugar and does not cause the insulin levels to spike the way regular refined sugars/syrups do. And, cocoa is
the only known product to contain these compounds. So, we may have a "Mythbusters" episode on our hands. Diabetics actually can eat chocolate...the healthy kind, that is.
